My Mum makes the best scones. I love to have them with her homemade apricot jam, very yummy. I on the other hand, I used to make terrible scones…until I found this recipe. It is not my mothers recipe, but one that works for me every time. Enjoy these scones with Lana’s Garden Rhubarb and Raspberry jam.
Makes about 20
Ingredients
3 cups self-raising flour
pinch of salt
1 cup of cream
1 cup of lemonade
Method
Sift flour and salt into a large bowl. Make a well in the centre. Pour in cream and lemonade.
Mix with a knife until mixture comes together. Turn dough onto a lightly floured surface. Knead gently
until smooth and pliable. Cut scones into rounds or squares. Arrange close together on a lightly greased tray. Brush with milk. Bake in a very hot oven(220C) for 10 to 12 min or until golden.
