Best Ever Scones

Lana’s Garden Warrnambool. Fresh home-grown Rhubarb
My Mum makes the best scones. I love to have them with her homemade apricot jam, very yummy. I on the other hand, I used to make terrible scones…until I found this recipe. It is not my mothers recipe, but one that works for me every time. Enjoy these scones with Lana’s Garden Rhubarb and Raspberry jam.

Makes about 20

Ingredients

3 cups self-raising flour
pinch of salt
1 cup of cream
1 cup of lemonade

Method

Sift flour and salt into a large bowl. Make a well in the centre. Pour in cream and lemonade.
Mix with a knife until mixture comes together. Turn dough onto a lightly floured surface. Knead gently
until smooth and pliable. Cut scones into rounds or squares. Arrange close together on a lightly greased tray. Brush with milk. Bake in a very hot oven(220C) for 10 to 12 min or until golden.

Rhubarb Delicious

This recipe is one that I have adapted from a banana delicious. It is quick, easy and the kids love it. Yummy hot and cold, serve with some vanilla ice-cream.
I recommend that you cut your rhubarb no longer than one centimeter, smaller if you are using very thick stalks.

Makes one 4 cup capacity dish

Ingredients

350gm rhubarb, chopped
3 eggs
80 gm raw sugar
80 gm coconut, desicated
2 Tbs Lana’s Garden rhubarb and raspberry jam

Method

Pre-heat oven to 180C. Place chopped rhubarb into an ovenproof dish. In a separate bowl mix together eggs and sugar, add coconut and jam, stir to combine. Pour coconut mixture over rhubarb.
Place in oven and cook for 25 min or until golden brown. Enjoy.

 

Just a Little Bit Naughty…

I love yogurt, sometimes I make my own with fresh cows milk, it is a nice thing to do.
Then for a quick and easy dessert I will add couple of teaspoons of Lana’s Garden Rhubarb and Raspberry Jam to my bowl of yogurt and stir it through…how easy is that.
A store bought natural or greek yogurt works just fine.

Then another idea that was told to me by an eight year old at a market , is to use an apple corer to make holes is a
tub of vanilla ice cream and then fill the holes with Lana’s Garden Rhubarb and Raspberry Jam. Put the tub back in the
freezer and once frozen enjoy a bowl of vanilla rhubarb and raspberry ice cream. Looks great, tastes yummy.
Rhubarb Muffins
This can be made as muffins or a cake, a ring tin works well. The rhubarb make these muffins super moist and tasty.
It is best to use muffin papers or line your cake tin so as rhubarb pieces do not stick.

Ingredients

1 1/2 cups Sugar
1/2 cup Butter
1 Egg
2 cups Plain flour
1 tsp Vanilla
1 tsp Bi carb soda
1 cup Sour milk
1/2 tsp salt
2 cups Rhubarb, chopped

Topping- 1/2 cup Brown sugar
1 Tbs Butter, softened

Method

Place all ingredients, except rhubarb in a bowl and mix until well combined. Add rhubarb and fold through.
Spoon mix into muffin tins or cake tin. Add topping.
Cook at 180 degrees celcius for approx 20 min, cake will take an hour.

 


Rhubarb & Strawberry Compote

This is a very quick and easy dessert. I like to eat it warm with vanilla yogurt but it is just as nice cold and it stores well in the fridge.
Rhubarb and strawberries go so well together, the quantities here make two very generous serves. You could add a number of flavours to this dish such as cinnamon, liqueur or vanilla but it is delicious as it is.

Ingredients

250gm rhubarb
250gm fresh strawberries
50gm sugar
120ml water

Method

Place all ingredients, except rhubarb in a bowl and mix until well combined. Add rhubarb and fold through.
Spoon mix into muffin tins or cake tin. Add topping.
Cook at 180 degrees celcius for approx 20 min, cake will take an hour.

Rhubarb Cocktail


Rhubarb Vinegar makes a refreshing drink. Fill your glass with still or sparkling water, add ice, mint and 5 – 10 ml of vinegar. For a cocktail add a slurp of vodka!
